Black Eyed Peas
The month of January is weird. Every where I go I meet people that are in a state of flux. Coming down of their Christmas high and trudging onwards day by day with work, or college, or parenting. There appears to be a cloud hanging over everyone. The same worries are flitting in and out of everyones conversations, so much so, it is hard to recall who you have been chatting with because it feels like we are all in the same (sometimes sinking) boat.
Job security, money, oil/gas prices, education costs, health insurance. I would venture to say, on a global scale, these are at the forefront of most peoples ‘things to worry about’ list.
Right now my list of things to worry about is very very long and fairly serious. I thought it would be wise to let you know I am worried too because you know as well as I do ‘a problem shared is a problem cared’.
I find that instead of getting bogged down by all the things everyone else is worried about, it is best to have a mooch around the house and find things that make you happy. Like this:
A photo of my beautiful hen and duck (and possibly guinea fowl) eggs. Imagine, in the dead of winter we are still reaping the most beautiful rewards of our (obviously) very happy birds.
Now back to the worrying …..
Oh. I worry about the fact that I will never be a good baker. Mostly because I am too heedless when it comes to all that measuring and timing of things in the oven. Daydreamers rarely make good bakers. Fact.
I worry that sooner or later the clothes will just fold themselves and march up to their respective rooms rendering me useless. I have had this worry for years and thankfully the clothes have refrained from taking the initiative to do so, just yet.
I worry, and this is real, that people with all their healthful filled notions will start eating more beans and less meat (which is a-ok with me) but not treat them properly and suffer the consequences because of it.
Here is a quick how to guide for beans:
Dried beans (uncooked) need to be soaked in A LOT of water overnight and boiled the next day in fresh water for at least two hours. If they are undercooked they play havoc with your stomach and cause other gestational problems that are not pleasant to discuss or experience. If you are wondering whether or not they are cooked enough just smush one between your thumb and fingers and if it disintegrates easily then they are cooked. If there is still a bit of firmness to it put them back on the stove and cook some more.
Tinned Beans are already cooked! Just open the tin and consume or heat ‘em up a bit if you need to eat them warm. You can make BBQ beans (which requires a bit of baking) but only to meld the sauce and seasonings together. One of the things we like to make on a regular basis around here is bean salad. The Chef, being from Alabama where this is a tradition, likes to start of the New Year with a big pot of Black Eyed Peas and this year we ended up making one of my favourite salads for lunch.
Give it a try. Remember with the kids maybe a bit less heat and more fresh herbs but make sure you get plenty of colour in their diet. This is a winner every time with ours and a nice (refreshing) change from the old bachelors beans or van de kamps pork n’ beans.

Now after you have made this salad – which takes no time at all by the way – you should think to yourself ‘how can I incorporate a lot more salad and healthy stuff into my diet this year?’
Isn’t it time you stopped procrastinating and started ‘doing’ instead of just talking about it. Beets, and they are easy to grow, come in the ready to go packages at every grocery and convenience shop in town. A little bit of garlic, diced chili and balsamic vinegar with salt & pepper to taste and you have the fastest salad in the west. And pretty too. The kids like to eat their beet salad with cottage cheese. This is not so pretty. Hence no photo.
I find that you can get stuck in a salad rut using the same bagged salad and bottle of thousand island dressing. Another quick and very tasty salad that we love is tomato and pomegranate. Cut the tomatoes in quarters and toss in olive oil. Drizzle with balsamic, salt & pepper and add a few little crumbles of Cashel Blue Cheese. Go to bed very happy.
Once you get out of the salad rut you are stuck in then the world is your oyster. Left over lentils become eye candy. The remnants of an almost empty bag of grated cheese – food confetti. That half dead bag of lettuce in the fridge that you are holding onto for emergencies – picked over – can give oompf to a side salad. And frozen peas, fresh from the freezer and still a bit frosty, add a delicious cold contrasting bite to your evening meal.
Isn’t it time you started to think outside the salad box?

Oh goodie. Well the snow has finally hit New England. We had our first winter snowstorm last night and so from now until March maybe even April my poor boys will rarely be without a shovel in hand. The first-born is out there right now not yet climatised, shivering and shoveling. I’m sure they would appreciate a heart-shaped Irish stew post shoveling, made with love by mum who loves a snow-free driveway.
Oh god I do not miss the days of shovelling the driveways and footpaths.
Make sure you buy some long johns for thoe poor kiddies! Of course there is always the fun side of
the snow with the sledding and skiing.. And yes Brenda you are right the boys would love a

I’d use it to cook a dish from my heart – Honey Braised Oxtail! Mmmmmm!
You are right about handing this down. The cast iron pieces are unbreakable – I would know.
And yes, I do like the Le Creuset products. I think a lot of people would be inspired to cook
from the heart with this one and I am a sucker for oxtail myself!

Aw – how cute. Bean casserole would be lovely. That reminds me of a recipe we have for a pasta fagiol soup.
It is delicious! If you want to indulge a bit with the seven layer salad put a bit of cottage cheese ( or cream cheese) as one of the layers. Very very nice..thanks for reading and commenting.

It made me want to dig out my bean cannisters again too, which is one of the first dishes I’d cook in the casserole if I won it. I would love to win this pot as I do not have a casserole dish and would love to start making them with beans. I am toying with the idea of going veggie, i don’t eat a lot of meat as it is. But it’s not easy when you have to cook it for others, let’s face it, there is nothing like the smell of roast! Maybe i will continue to limit it to once a week. If i completely give it up i’ll probably turn into the biggest carnivore around just from denying myself!

and very carefully source our meat. We have three young girls and a little boy. Ten years ago I read a horrifying article about the effect meat injected with growth hormones was having on the development

Well done Lorraine. When my husbands moved back home to Galway with me it was a small bit of a culture shock to him, being from Alabama. I remember the first time he made brown soda bread ( first day at his new job) and this little old lady scolded him for putting sesame seeds ontop telling him he had ruined the bread.
She came back to the shop later that day to tell him it was the best loaf of bread she had ever had. It think it is in the mixing of food cultures where the real magic happens xx

What a lovely romantic prize. I don’t iron clothes – I think it’s a waste of time and usually if you hang them properly while they’re drying, they don’t need it. I will make an exception for a wedding or a job interview though! Even still, we always have a pile of clothing in this house too. I’d say it’s just one of the signs of life in any home!
What would I do with this Le Creuset dish? Many things. Perhaps some kind of spicy, bean-y dish inspired by your love of beans above?

When we lived in the US one of my best friends, who hated ironing, used to come over
with her ironing and I would do hers while she raked the leaves in our garden from
our three large oak trees. Then, we ate, drank and were merry – those are real friends xx

Oh my…what to do with the worlds cutest little red pot? I’m thinking, simply melt some chocolate; surround with mounds of fresh fruit; add kabob sticks and let ‘em at it! Imagine the lovely dishes you could conjure up if you were cooking for two!
Ok- beets are messy so glove up if you have to or just take it like a man and have pink hands for
a few days! Throw them in the oven, unpeeled, with olive oil, salt, pepper, a few chilies and some bacon stretched over top of them. Let them roast on a high heat for a few minutes then turn down the heat and leave to cook low and slow for an hour. Peel them once they have cooled and slice them for supper. So so so good.

For years I had never thought to treat it like a carrot, but it holds its own delightfully in salads, and is particularly good friends with the walnut.

Ah yes, the worrying part of January…Weird that everything just seems worse in january. It really does… In any case; I worry too. I worry a lot but that doesn’t stop me from doing the fun things in life too. And all those yummy salads will definitely make me happier..

Ah, Mona, I worry all the time but have to keep positive and a clear head because I live with King Worrywort – he worries all the time and I am the only thing from keeping his head from exploding. And when you sit down and think of it – and talk about it – you realize that things are not that bad and that you (we) all have so much to be happy with and thankful for and, after all, life is pretty good. That said, I am loving that black-eyed pea salad. AND that Le Creuset pot! Gorgeous! Oh I have loads of things to make for two in that pot. Soup. Blanquette. Panna Cotta. Mona! thanks for the beans encouragement, I do love them but never eat them. The seven layer salad looks daunting. I can do a seven layer cake no problem though! Also, Can I’ve the pot? I’ve always wanted one but they’re so expensive. Let me look posh in front of my friends will ya?

I have become a huge fan of peas & beans and I picked up a few tins of black eyed beans after reading this post on Saturday. They didn’t have any of the peas, are they similar?
I actually have been meaning to treat myself to a Le Creuset casserole pot. Perfect for slow cooking a nice bourguignon.

You know, for some reason they are called Black Eyed Beans here and ‘peas’ in America. It is out of habit I still call them peas :0)

We are trying to find a good way to photograph a seven-layer salad. It is not that easy to make it look good ;0) but is sure does taste great?

I would attempt to cook either some moules marinières or braised chicken thighs with red wine sauce in that lovely little pot. I’ve been paying attention to more cooking demonstrations than just crepes

head. I had visions of you, fancy apron on, cooking up a storm in your cute little French attic.
There was a dashingly handsome dude waiting to be served your sumptuous supper and he, holding a baby kitten on his lap and telling you all about his job as an animal rescuer, looked shockingly similar to Henry of the fabulous Baker brothers….anyone would swear I had infiltrated your dreams xxx best of luck to you.
I have been lusting after a Le Cruset pot for ages and this looks like it would suit our two adult household just fine. I would love to cook a few different things in it, I’m slowly learning how to cook better since I had to give up gluten and this would be a boon!
