Red hot Oysters, Sweet potato gratin and Prawns in pernod sauce

Ah … the oysters are back in season and we are enjoying every one of them. If you are coming to Galway for the Oyster festival then find me on Twitter and we can meet up in town to sample the best Galway has to offer this time of year.

You know Colette – Galway is great for the festivals alright. I hope the sun stays shining for the festival this weekend – it is one of my favourites. AND YES – - I know you will be heading west sooner or later so please PLEASE do let us know. We will get Alfie & Margaret over and all have a lovely cook-a-long xx
