Corn and Cauliflower Chowder

Soup ….. or Chowder.

Call it what you will.

We steer clear of the thin and lacklustre ‘veg’ soup and favour bigger bolder flavours with a bit of body.

Corn and Cauliflower Chowder

Chunky Comforting Corn and Cauliflower Chowder.
Ingredients
  • 125 g smoked streaky rashers of bacon
  • 1 medium onion, diced
  • 260 g corn, frozen
  • A half head of cauliflower, broken into florets
  • 240 ml chicken/veg stock
  • 500 ml skimmed milk
  • 1 tsp white pepper
  • 2 ears of fresh corn, uncooked

Instructions
  1. Sauté bacon until cooked then add the onion and cook until it softens but do not let it brown.
  2. Season with salt and pepper then add the cauliflower and frozen corn.
  3. Add the chicken stock, cover with lid and allow to simmer for 15 minutes.
  4. Test the cauliflower to see if it is cooked (if not, allow a few more minutes) and then add the milk and more white pepper if needed.
  5. Bring to the boil slowly. Scrape fresh corn off the cob and add in at the last minute right before serving, reserving a decent spoonful for the top.

 

Ladled into a bowl steaming hot coupled with spice from the white pepper, this is delicious.

Oh yeah … and there is bacon in it too.

  • I HAVE eaten, and would without question eat (and now make) again. If anyone likes the creaminess of the more well-known (in Ireland, anyway) sea food chowder, they’re going to love this. ESPECIALLY the rashers!

    • I know – the bacon hooks me every time …Dying to see if it appeals though.
      I think the blended soups are more of a favourite here on the island.

  • Very tempted to make this for friends I’m having to lunch this weekend! Just wanted to check – from the sounds of the recipe, the fresh corn remains uncooked? Thanks

    • Hi Rachel,
      It is added in at the last minute so assuming the soup is ‘hot’ then the fresh corn will cook a little – it gives a fresh and sugary burst in the mouth
      when you use the combination of fresh corn with cooked corn. We eat raw corn quite a bit here – assuming we get decent corn that is. This year most of the good ears came from Germany and the UK. I will dig out a recipe for corn salsa soon and share that soon.

  • Looks and sounds yum Mona, I’m going to make it but without the bacon as I’m a veggie. Any suggestions for an alternative to the bacon or will I just omit?

    • I would suggest using a few dried (then re-hydrated) Shiitake mushrooms. They give an excellent ‘meaty’ flavour to vegetarian meals and
      are delicious. Of course it will taste just fine without the bacon and using veg stock instead of chicken stock. Just make sure to adjust the seasoning as bacon has salt amongst other thing. If you are not vegan I would suggest adding a small knob of (real) butter at the end to finish it out in flavour.

  • Sounds delicious, wish i had some Irish streaky bacon rashers.. but i do make almost the exact same soup with the local alsacian smoked lardons… Except it is almost impossible to get fresh corn here. Amazing considering the size of the fields around here full of corn… No-one eats it though – its all “cow-feed”.
    As a PS…. was there a reason this time you had to justify that Ron made the soup…has he started looking at the internet?? :o )

      Thanks so much. It is fabulous – I cannot tell you how many times we have made it for supper
      and everyone that tries it is shocked that it contains no cream. The corn and cauliflower produce
      their own lovely thick richness and it is chock full of flavour.

  • I’ve made a chowder very much like this, but have added some finely chopped bits of sweet potato too: gives a bit of bright color and adds to the ‘sweetness’. Lucky girl, with Ron to cook for you…

      That sounds fab! We love (and grow) sweet potato here and like to include in our diet
      in many different ways. I am very lucky having a chef here to cook supper for me every day x

  • Yes, I shall surely make this lovely soup, but without the corn as I have a vendetta against corn. Cauliflower is another matter: along with coriander it is my current obsession and no dish reaches the table without a touch of both. I even tried that mashed cauliflower Internet trend that is supposed to be the low-calorie answer to mashed potato, but just as was the case with blender banana ice cream it was a disaster. I shall revisit your reliable cookbook to redeem my cooking reputation.

      I am sure that you will make a fine job of it sans corn. But one does pause for a moment and wonder whatever has
      the corn done to you to deserve such ostracising? I do love cauliflower … but was completely unaware of the magical powers it has.
      I think mashed cauliflower might be a bit, eh, loose? Now, I will have to get the chef to give it a try and see if we cannot make Belgian Waffles
      out of it or something equally fabulous. Glad to see you back to blogging!

  • I’ll absolutely try this Mona. Don’t drink milk though. I know it’ll lack some of the creaminess – but how do you think it would be with just a veggie stock?

    • Nah, Sarah, it will be fine without it actually.
      The corn produces enough of its own creamy consistency and the cauliflower just adds to it.
